Korean gimbap is a beloved classic of portable Korean cuisine, known for its harmonious balance of seasoned rice, vegetables, and protein wrapped in savory seaweed sheets. This version elevates the traditional filling by incorporating savory BBQ-marinated pork cooked dry for maximum flavor and finished with a brief torch sear for a subtle charcoal note.
Ingredients
- 400 g lean pork
- 1 bunch spinach
- 2 carrots
- 1 head lettuce
- 1 pack pickled radish
- 3 eggs
- 5 sheets seaweed sheets
- 1 tbsp white sugar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp pepper
- 3 cloves minced garlic
- 2 stalks scallions

Instructions
- 1Marinate the Pork

Place nearly 400 grams of lean pork in a bowl, then add a spoonful of white sugar, two spoons of soy sauce, a spoonful of sesame oil, pepper, minced garlic, and scallions. Mix everything thoroughly and let it marinate for 10 minutes.
Tip: Allowing the meat to rest for a full 10 minutes helps the savory seasonings penetrate deeply before cooking. - 2Stir-Fry the Spinach

Add a little cooking oil to a heated pan, then toss in the fresh spinach along with a pinch of salt. Quick-toss over high heat to keep the greens vibrant and tender without losing their natural color.

Place a little oil in the pan and add the shredded carrots, seasoning lightly with salt. Stir-fry quickly over high heat until they soften slightly while retaining their bright orange color.

Pour the beaten eggs evenly into a heated pan. To create a thick egg layer suitable for the gimbap filling, carefully fold in all four sides as the eggs set.
