Spicy Braised Crayfish (Mala Crayfish)
Experience the bold, numbing heat of authentic spicy crayfish. This vibrant dish features tender shellfish simmered in a rich, aromatic broth.
Crayfish, or crawfish, are a beloved delicacy celebrated for their firm, sweet meat and ability to soak up intense spices. This preparation uses a unique cooking technique with a specialty beverage to create a complex, savory, and slightly sweet broth. Garnished with fresh cilantro, it is a communal, hands-on meal that brings people together.
Ingredients
- 1 kg fresh crayfish
- 1 bottle 8+1 beverage
- 2 tbsp cooking wine
- 30 g fresh ginger
- 5 cloves garlic
- 3 stalks green onions
- 1 sausage
- 1 cucumber
- 2 green peppers
- to taste fresh cilantro
Instructions
- 1Blanch the crayfish

Place the cleaned crayfish into a pan, add a splash of cooking wine, and pour in boiling water to blanch them. This process helps remove impurities and any fishy odors from the crayfish.
Tip: Blanching is a crucial step for clean-tasting shellfish. - 2Stir-fry with aromatics

Heat oil in a pan, add the blanched crayfish, and stir-fry evenly. Toss in green onions, ginger, and garlic to infuse the dish with aromatic flavors.
Tip: Keep the heat high to sear the aromatics and crayfish quickly. - 3Simmer with special sauce

Pour in a bottle of 8+1 beverage, then add boiling water to the pan. Let the crayfish simmer for 15 minutes to absorb the flavors.
Tip: Using a specialty beverage adds a unique depth and sweetness to the broth. - 4Add savory side dishes

Incorporate your favorite side dishes into the simmering pan; here, we added sliced sausage and green peppers to complement the crayfish.
Tip: Adding these at this stage allows them to cook through while soaking up the flavorful liquid. - 5Finish with cucumber

Add fresh cucumber slices to the mixture, stir to combine, and cook briefly. Finally, transfer to a serving dish and garnish with cilantro for a fresh, delicious finish.
Tip: Cilantro adds a great aromatic finish right before serving.
