The gentle steam of sake coaxes the shells open while drawing out their natural briny sweetness, finished with a dash of soy sauce and melting butter for a deeply savory broth.
Ingredients
- 500 g fresh clams
- 100 ml sake
- 3 cloves garlic
- 2 pieces dry chili peppers
- 1 tbsp dark soy sauce
- 15 g butter
- 2 stalks green onions
- 1 tbsp cooking oil
Instructions
- 1Soak and purge the clams

Place the fresh clams into a glass bowl filled with clean water and let them soak for about 1 hour. This allows the clams to expel any trapped sand and impurities from their shells before cooking.
Tip: Make sure the water completely covers the clams so they can effectively filter out the sand. - 2Prepare the dry chili peppers

Take the dry chili peppers and break them apart using your hands directly over a wooden cutting board. Carefully remove and discard the seeds to control the level of heat in the dish.
