Braising whole fish is a cornerstone of homestyle cooking, where the technique of combining a hard sear with a slow simmer yields incredibly tender meat. In this recipe, beer acts as the primary braising liquid, tenderizing the yellow tail while adding a complex maltiness that neutralizes any fishy odors. Pickled peppers and aromatics cut through the richness, creating a glossy, flavor-packed sauce meant to be spooned generously over steamed rice.
Ingredients
- 2 whole yellow tail fish (cleaned and scored)
- 3 tbsp cooking oil
- 1 thumb ginger (minced)
- 3 cloves garlic (minced)
- 2 fresh chili peppers (chopped)
- 1 tbsp pickled peppers
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 can (330ml) beer
- 1 tsp salt
- 1/2 tsp MSG
- 1/2 tsp white pepper powder
- 2 stalks green onions (chopped)
Instructions
- 1Fry the fish

Carefully slide the scored whole fish from the plate into a wok filled with hot oil to begin frying.
Tip: Ensure the wok and oil are very hot before adding the fish so the skin sears quickly and doesnt stick to the pan. - 2Pan-fry until golden

Fry the fish undisturbed until the bottom sets, then carefully flip them. Continue frying until both sides develop a crispy, golden-yellow crust, then temporarily remove them from the wok.
Tip: Do not move the fish immediately after placing them in the wok; let the crust form first to avoid tearing the delicate skin. - 3Sauté the aromatics

Add minced ginger, minced garlic, chopped fresh chili peppers, and pickled peppers into the hot wok. Sauté the ingredients over medium heat until fragrant and slightly softened, building the flavorful foundation for the dish.
Tip: Sauté the pickled peppers along with the fresh aromatics to release their sour and spicy flavors directly into the oil. - 4Return fish to the wok
