Tantanmen is the Japanese take on Chinese dan dan noodles, famously known for its creamy, sesame-rich broth and spicy kick. While traditional versions require complex techniques, this approach uses chicken bouillon, ground sesame, and milk to create a deeply satisfying, velvety soup in just a fraction of the time. It is the perfect comforting meal for when you want authentic flavor without the long wait.
Ingredients
- 100g ground pork
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 tbsp miso paste
- 1 tsp sugar
- 1 tbsp chicken bouillon powder
- 2 tbsp ground sesame
- 400ml water
- 100ml milk
- 1 serving ramen noodles, cooked
- 1 tbsp sesame oil
- to taste chopped green onions
- to taste chili oil

Add a small amount of sesame oil to a pan and heat it up. Add 100g of ground pork along with minced garlic and ginger, then stir-fry until the meat is browned.
Tip: Be careful not to burn the garlic and ginger; keep them moving with the pork. - 2Season the meat

Continue stir-frying the ground pork with the aromatics. Once the pork is browned, add the miso (bean paste) to the mixture and incorporate it well.
