- 1 tsp sugar
- 1 tbsp soy sauce
- 1 small pack dashi stock
- 3 tbsp water
- 1 egg
- 150 cc cold water
- 90 g low-gluten flour
- 10 g starch
- 200 g cooked rice

- 1Prepare the tempura sauce

In a small glass bowl, combine 2 tablespoons of mirin, 1 teaspoon of sugar, 1 tablespoon of soy sauce, 1 small pack of dashi stock, and 3 tablespoons of water. Whisk the ingredients thoroughly until well combined.

Carefully remove the shells from the shrimp, making sure to keep the tails intact. This preserves the presentation and provides a handle for dipping.
