Ingredients
- 3 chicken thighs, boneless and skinless
- 1 g salt
- 2 g light soy sauce
- 1 g Shaoxing wine
- 1 g black pepper
- 1 g cornstarch
- 1 tbsp cooking oil
- to taste preserved mustard greens (zha cai)
- to taste green onions
- to taste dark soy sauce
- to taste white sugar
- to serve cooked white rice
- 1 per serving onsen egg
- to taste dried nori seaweed flakes
Instructions
- 1Marinate the chicken

Place the chopped chicken pieces into a glass bowl. Add salt, light soy sauce, Shaoxing wine, black pepper, and cornstarch. Toss everything thoroughly to ensure the chicken is evenly coated, then let it marinate for 10 minutes to tenderize and absorb the flavors.

Empty the preserved mustard greens (zha cai) onto a cutting board and finely chop them. Also, finely chop the green onions, making sure to separate the white parts from the green tops, as they will be added at different stages of cooking.
