Luxury Chicken Soup Ramen
Shiitake & Bok Choy
Upgrade instant ramen with a whole simmered chicken drumstick. This easy technique yields a rich, golden broth brimming with fresh shiitake and crisp bok choy.
Instant ramen is a beloved quick meal, but taking a few extra minutes to build a semi-homemade broth completely transforms the dish. By briefly blanching the chicken first, you ensure a clean, clear soup base free of impurities. Simmering the drumstick with the provided seasoning packets extracts deep, savory notes, creating a luxurious bowl that feels entirely from scratch.
Ingredients
- 1 chicken drumstick
- 1 pack instant ramen noodles with seasoning and garnish packets
- 2-3 slices fresh ginger
- 1 green onion (scallion)
- 2 whole shiitake mushrooms
- 2 leaves fresh bok choy
- a pinch salt
- as needed water
Instructions
- 1Prepare the chicken base

Place the chicken drumsticks into a pot of cold water along with ginger slices, green onions, and a pinch of salt. Bring to a boil for three minutes to clean the chicken, then drain the water before proceeding.
Tip: Starting with cold water helps draw out impurities from the chicken for a cleaner tasting broth. - 2Season the broth

Add fresh water back into the pot with the blanched chicken drumsticks and the ramen seasoning packet. Bring the mixture to a boil and cook for twenty minutes to develop the flavor.
Tip: Ensuring the chicken is fully submerged in the seasoned broth will allow it to absorb the flavors thoroughly. - 3Add mushrooms

Place the whole shiitake mushrooms into the pot with the simmering chicken broth and continue to cook for an additional three minutes.
Tip: You can score the top of the mushrooms in a cross pattern to help them cook evenly and look more professional. - 4Cook the noodles

After removing the chicken drumsticks from the pot, add the block of ramen noodles directly into the boiling broth.
Tip: Gently press the noodles down so they are fully covered by the hot broth. - 5Add vegetables

Add the fresh bok choy leaves into the pot along with the noodles. Allow them to wilt in the hot broth.
Tip: Bok choy cooks very quickly, so add it near the very end to keep a nice crunch. - 6Final garnish and serve

Finish the dish by sprinkling the ramen garnish packet, which contains corn and dried scallions, into the pot. Cook for one final minute before serving.
Tip: Serve immediately while the noodles are perfectly al dente and the broth is piping hot.
