Spicy Pork Bibimbap

This spicy pork bibimbap combines savory, tender slices of pork belly with a sweet and spicy Korean-inspired glaze. Served over a bed of piping hot rice with crisp, water-soaked onions and a rich raw egg yolk, every bite offers a harmonious balance of textures and flavors.
Ingredients
- 300 g pork belly
- 1 onion
- 1 bowl white rice
- 1 egg yolk
- 2 tbsp light soy sauce
- 1 tbsp mirin
- 1 tbsp oyster sauce
- 1 tbsp white sugar
- 1 tsp chili powder
- 1.5 tbsp Korean chili paste
- 2 cloves minced garlic
- 2 stalks green onion
- 1 tsp white sesame seeds
- a pinch sugar for soaking
Instructions
- 1Soak the onions

Place the thinly sliced onions into a bowl, add water and a little bit of sugar, and let them soak for 15 minutes to remove their sharp taste.
Tip: Adding a little sugar helps draw out the sharp bite quickly. - 2Mix the Sauce

Combine light soy sauce, mirin, oyster sauce, white sugar, chili powder, and Korean chili paste in a measuring cup, stir thoroughly until smooth, and set aside.
Tip: Mix the Korean chili paste thoroughly so it dissolves smoothly into the liquid ingredients. - 3Render the Pork Belly

Heat a pan with a small amount of oil, add the raw pork belly slices, and fry them over medium heat until they release their natural fat.
Tip: Start with medium heat to let the pork belly render its natural fat slowly. - 4Sauté the Aromatics

Toss chopped green onions and minced garlic directly into the pan with the frying pork slices, stir-frying until aromatic.

Pour the prepared red sauce into the pan, stirring continuously so the pork slices become evenly coated and absorb the rich flavors.
