Clay Pot
Experience the authentic flavors of salt-baked yellow fin bream cooked in a clay pot. Quick, simple, and delivering the perfect balance of pan-fried aroma and steamed tenderness.
This unique cooking method combines traditional clay pot baking with simple seasonings to highlight the natural sweetness of yellow fin bream. By using minimal oil and coarse salt, the fish locks in its original moisture while developing a wonderfully aromatic base from ginger.
Ingredients
- 1 whole yellow fin bream
- 1 tsp salt
- 1 tbsp cooking oil
- 1 piece ginger
- 1 splash water
- to taste green onions
Instructions
- 1Score the Fish

Place the whole raw yellow fin bream on a wooden cutting board and use a large cleaver knife to make a cut in the middle of the fish without cutting it all the way through.
Tip: Scoring the fish helps it absorb seasoning and cook more evenly. - 2Prepare Seasoning

Pour a small amount of salt and a drizzle of cooking oil onto a stainless steel plate.
Tip: Keep the oil and salt ready for seasoning the fish. - 3Season the Fish

Use your hands to rub oil and salt evenly over the raw fish inside the stainless steel plate.
Tip: Ensure all parts of the fish are coated with oil and salt for maximum flavor. - 4Oil and Ginger the Pot

Using a spoon, coat the bottom of a brown clay pot with oil, then rub a piece of ginger over the oiled surface to release its aromatics and prevent sticking.
Tip: This prevents the fish from sticking and adds aromatic flavor to the base. - 5Place Fish in Pot

Place the seasoned raw fish into the clay pot directly on top of the ginger slices.
Tip: Lay the fish carefully to rest evenly over the aromatics. - 6Add Water

Carefully pour a splash of water into the bottom of the clay pot to create steam for the baking process.
Tip: Add an appropriate amount of water to create steam and simmer the fish properly.
