Inspired by the popular warehouse club bakery favorite, this homemade kimchi pork roll combines a comforting yeast dough with a bold, savory filling. Packed with tender pork belly, crunchy kimchi, earthy mushrooms, and melted cheese, it is a satisfying fusion snack that comes together easily with an oven or air fryer.
Ingredients

- 3 g salt
- 10 g sugar
- 15 ml corn oil
- 90 ml water
- 60 ml milk
- 200 g pork belly
- 150 g kimchi
- 100 g mushrooms
- 2 tbsp Korean-style mixed rice sauce
- 100 g shredded mozzarella cheese
- 1 tsp sesame seeds

- 1Combine the dry ingredients

Add the flour, salt, sugar, and corn oil into a clear glass mixing bowl. Stir the ingredients together until the oil is evenly distributed throughout the dry mixture.
Tip: Thoroughly mixing the corn oil into the flour before adding liquid helps create a tender, flaky texture in the final dough. - 2Knead the dough

Slowly pour in the water and milk while stirring. Once a shaggy mass forms, use your hands to knead the mixture directly in the glass bowl until it becomes a smooth, elastic dough.
Tip: Add the liquids gradually. Depending on the brand of flour, you may need slightly more or less liquid to achieve the right consistency. - 3Blanch the pork belly

Bring a pot of water to a rolling boil. Carefully drop the raw pork belly pieces into the hot water to quickly blanch them, which helps to remove excess fat and impurities.
