Ingredients
- 2 pieces pork plum meat
- 2 slices ginger
- 1 tbsp cooking wine
- 1 tbsp light soy sauce
- to taste salt
- to taste black pepper
- 100 g minced beef
- 1 packet fine chili powder
- 1 block spicy curry block
- 1 block non-spicy curry block
- 100 g milk
- 1 bowl clear water
- 1 potato
- 1 carrot
- 2 cloves minced garlic
- 1 onion
- 1 tsp dark soy sauce
- 1/2 cup cornstarch
- 2 eggs
- 1 cup breadcrumbs
- 2 tbsp light soy sauce for sauce
- 1 tbsp tomato sauce
- 1 tbsp white sugar
- 1/2 tbsp oyster sauce
- 1 tsp cornstarch for sauce
- 1/2 bowl clear water for sauce
- to taste parsley
Instructions
- 1Season the pork cutlets

Place the cut pork plum meat into a metal bowl along with 2 slices of ginger. Add cooking wine or scallion ginger water, light soy sauce, a little salt, and black pepper, then mix well and marinate for half an hour.
Tip: Ensure the marinade is well distributed across both sides of the meat so the flavor penetrates deeply during the half-hour resting time. - 2Stir-fry minced beef

Heat oil in a pan, add the minced beef, and stir-fry over high heat until the meat changes color. Then, reduce to low heat and prepare for seasoning.
Tip: Stir-frying over high heat initially helps lock in juices before lowering the temperature to incorporate dry spices and liquids. - 3Add curry blocks and seasonings

Season the cooked minced beef with black pepper, a little salt, light soy sauce, fine chili powder, and curry blocks. Combine a spicy block and a non-spicy block together for a balanced flavor profile.
Tip: Combining different curry block varieties lets you customize the heat level to your exact preference. - 4Add vegetables and simmer

Pour in about 100 grams of milk, a bowl of clear water, diced potatoes, and diced carrots, along with minced garlic and diced onions. Add a little dark soy sauce to adjust the color and simmer slowly on low heat until tender.
Tip: Keep an eye on the water level while simmering and replenish it promptly if it starts to dry out too quickly. - 5Set up breading station

Prepare four separate containers with cornstarch, beaten eggs, breadcrumbs, and the marinated pork cutlets to get ready for the coating process.
Tip: Arrange your station in a logical sequence—cornstarch, egg wash, and then breadcrumbs—to keep the workspace clean and efficient.
