Bacon-Wrapped Bone-In Beef Burger
Roasted Marrow
Elevate your burger experience with a massive beef patty wrapped in a bacon weave. Smoked to perfection and served on toasted buns with luxurious roasted bone marrow, this recipe is pure decadence.
This over the top burger combines the smoky crunch of a bacon weave with the luxurious richness of roasted bone marrow. Smoking the marrow bone directly inside the ground beef allows the flavors to meld beautifully, creating a patty that remains incredibly juicy. Spreading the marrow directly onto the toasted bun acts as the ultimate savory butter substitute.
Ingredients
- 1 large bone marrow bone
- 500 g ground beef
- 10-12 strips raw bacon
- 3 tbsp dark barbecue sauce
- 2 burger buns
- 2 slices yellow cheddar cheese
Instructions
- 1Prepare the beef block

Take a large, square block of ground beef and firmly press a meaty bone marrow bone into the center of it. Ensure the bone is securely embedded in the meat to create the base for the dish.
Tip: Keep the ground beef cold until you are ready to assemble, as it will be easier to shape and hold its form. - 2Wrap with bacon

Carefully wrap the entire exterior of the ground beef block with strips of raw bacon. Make sure the bacon overlaps slightly and covers all sides of the beef block to seal it completely.
Tip: Using a weave pattern or slight overlap prevents gaps, ensuring the beef stays moist and flavorful during the smoking process. - 3Apply barbecue sauce

Once the block is fully wrapped in bacon, use a brush to apply a generous and even layer of dark barbecue sauce over the entire exterior. This will caramelize and add flavor while it smokes.
Tip: Apply the sauce towards the end of the prep before putting it on the smoker for the best finish. - 4Scoop the roasted marrow

After smoking the meat, remove the bone and use a spoon to scoop out the rich, roasted bone marrow from inside the bone. Spread this decadent marrow directly onto the surface of a toasted burger bun.
Tip: Ensure the bone is sufficiently roasted so the marrow is soft and easily scoopable. - 5Add cheese

Take a slice of yellow cheese and place it directly over the toasted bun that has been spread with the roasted bone marrow. The heat from the bun and marrow will slightly soften the cheese.
Tip: Use a cheese that melts well, such as cheddar or American, for the best texture. - 6Assemble the burger

Finally, place a thick slice of the cooked, bacon-wrapped beef patty on top of the cheese-covered bun. Serve immediately while hot.
Tip: Slice the beef block carefully to keep the bacon wrap and beef structure intact.
