Comforting Dumpling Soup
Vermicelli and Spinach
Warm up with this quick and comforting dumpling soup. Featuring plump boiled dumplings, slippery vermicelli, firm tofu, and fresh spinach in a savory, tangy broth.
When the weather turns cold, nothing satisfies quite like a steaming bowl of homemade soup. This recipe is a fantastic way to elevate standard frozen dumplings into a complete, hearty meal. By simmering the dumplings with firm tofu, slurpable vermicelli, and fresh greens, you create a wonderfully textured dish. The real secret is the quick, no-cook seasoning sauce—a zesty mix of ginger, Sichuan pepper, soy, and vinegar—that instantly transforms the dumpling cooking water into a deeply comforting, flavorful broth.
Ingredients
- 12 frozen dumplings
- 1 block firm tofu
- 1 small bunch fresh spinach
- 1 small bundle vermicelli noodles
- 2 scallions
- 1/2 tsp ground Sichuan pepper
- 1/2 tsp ginger powder
- 1 tbsp soy sauce
- 1 tbsp black vinegar
- to taste salt
Instructions
- 1Slice the scallions

Place the fresh scallions on a wooden cutting board and use a sharp cleaver to slice them into small, uniform pieces. Set these aside to use later in your seasoning sauce.
Tip: Keep your fingers tucked in while chopping to ensure safety. - 2Chop the spinach

Take the fresh spinach and chop it into smaller, manageable pieces on your cutting board. These pieces will be added to the soup toward the end of the cooking process.
Tip: Ensure the spinach is washed and dried before chopping to avoid excess water in the soup. - 3Slice the tofu

Carefully slice the firm tofu into thin, uniform strips. These strips will cook quickly and absorb the flavors of the soup.
Tip: Use firm tofu so it holds its shape during simmering. - 4Prepare the seasoning sauce

In a small mixing bowl, combine the chopped scallions with ground Sichuan pepper, ginger powder, savory soy sauce, a splash of vinegar, and a pinch of salt. Mix well to create the flavor base for your soup.
Tip: Adjust the amount of Sichuan pepper based on your preference for heat. - 5Boil the dumplings

Bring a pot of water to a rolling boil with a pinch of salt. Gently drop the frozen dumplings into the water to cook.
Tip: Adding a pinch of salt to the water helps prevent the dumpling skins from sticking to each other. - 6Add tofu to the pot

Once the dumplings are partially cooked, add the prepared tofu strips to the pot. Allow them to simmer together so the flavors meld.
Tip: Add the tofu gently to avoid breaking the dumplings. - 7Add vermicelli noodles

Once the water in the pot returns to a boil, gently add the vermicelli noodles to the mixture of dumplings, tofu strips, and boiling water. Continue to cook until the noodles are soft and thoroughly heated through, ensuring they absorb the flavors of the broth.
Tip: Do not overcook the vermicelli as they can become mushy; they cook very quickly once added to the boiling water.
