A light, waterless one-pot dish featuring tender chicken thighs, cabbage, carrots, and mushrooms simmered entirely in their own natural juices.
This waterless chicken and vegetable pot locks in pure flavor by letting fresh ingredients simmer entirely in their own released juices without adding a single drop of water. With tender chicken thigh pieces layered between sweet cabbage, earthy mushrooms, and aromatic vegetables, it creates a rich, low-calorie broth that is as comforting as it is healthy.
Ingredients
- 5-6 chicken thighs (deboned)
- 1 head cabbage
- 2 carrots
- 1 onion
- several shiitake mushrooms
- 1 pack shimeji mushrooms
- 3 cloves garlic
- 3 slices ginger
- 2 tbsp light soy sauce
- 1 tbsp cooking wine
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- to taste salt
- to taste black pepper
- as needed cooking oil
- 1 stalk green onions
Instructions
- 1Cut the Chicken Thighs

Place the deboned, raw chicken thighs on a wooden cutting board and slice them carefully into small, bite-sized pieces using a sharp chefs knife.

Transfer the cut chicken pieces into a white rectangular dish along with minced garlic, light soy sauce, cooking wine, oyster sauce, salt, and a pinch of black pepper.
