Ingredients
- 1 kg pork belly
- 1 onion
- 1 apple
- 2 green peppers
- 2 stalks scallions
- 3 cloves garlic
- 3 slices ginger
- 1 tbsp coffee powder
- 1 tbsp Korean soybean paste
- 2 tbsp raw soy sauce
- 1 tbsp white wine
- 1 sprig rosemary
- 1 tsp black pepper
- 500 ml water
- 150 g kimchi
- 1 block tofu
- 100 g mushrooms
- to taste lettuce
Instructions
- 1Wash the Fresh Ingredients

Place green peppers, an apple, and an onion into a metal bowl and wash them thoroughly under running water in the kitchen sink.
Tip: Ensure all produce is thoroughly cleaned to remove any surface impurities before prepping. - 2Slice the Apple

Place the washed apple on a wooden cutting board, cut it in half, and slice it into wedges using a kitchen knife.
Tip: Hold the apple firmly to ensure clean and safe cuts. - 3Chop Onion and Green Peppers

Cut the onion into chunks and slice the green peppers on the wooden cutting board using a kitchen knife.
Tip: Cut the vegetables evenly so they release flavor consistently during cooking. - 4Grind Coffee Beans

Grind coffee beans using a beige coffee grinder machine placed on the kitchen counter to prepare for adding a smoky flavor to the dish.
Tip: Freshly ground coffee adds a subtle, unique depth and smoky aroma to boiled pork. - 5Sear the Pork Belly

Place chunks of pork belly into a frying pan with a small amount of oil to sear.
Tip: Heat the pan properly before adding the pork to achieve a nice golden sear. - 6Brown the Pork Belly Sides

Turn the pork belly pieces with chopsticks in the pan until each side is golden brown.
Tip: Browning all sides helps lock in the juices before stewing. - 7Sauté the aromatics

Using the remaining oil from frying the pork belly, stir-fry the chopped onions, scallions, and sliced green peppers in the pan until they release their aroma.
Tip: Sautéing the aromatics in the rendered pork fat builds a rich, savory foundation for the broth. - 8Add water and soybean paste

Add 1 spoonful of soybean paste and 500ml of water into the pot to dissolve with the sautéed vegetables, creating the base broth.
Tip: Make sure the soybean paste is thoroughly dissolved into the water before adding other ingredients. - 9Add apples and herbs

Drop apple slices and a sprig of rosemary into the boiling pot of broth, along with black pepper, raw soy sauce, white wine, and coffee powder.
Tip: Apples bring a natural sweetness that balances the savory depth of the soybean paste and coffee. - 10Simmer the pork belly

Add the previously fried pork belly pieces into the simmering pot of broth. Simmer on low heat for 40 minutes, or use a pressure cooker for 10 minutes.
Tip: Simmering allows the pork belly to absorb all the complex flavors from the apples, coffee, and aromatics.
