- 3 tbsp red curry paste
- 1 tbsp palm sugar
- 1 tbsp fish sauce
- 2 pcs kaffir lime leaves
- to taste white pepper
Instructions
- 1Sauté the curry paste

Heat a small amount of coconut cream in a pan over medium heat. Add the red curry paste and stir continuously until it becomes fragrant and the oils begin to separate.
Tip: Do not let the paste burn while frying. - 2Simmer with coconut milk

Slowly pour in the remaining coconut milk while stirring to combine with the paste. Bring the mixture to a gentle simmer, ensuring the liquid is smooth and well incorporated.
Tip: Maintain a low heat to prevent the sauce from splitting. - 3Season the sauce

Add the palm sugar, fish sauce, and kaffir lime leaves to the pan. Stir until the sugar has fully dissolved into the sauce.
Tip: Adjust the seasoning by adding a little more fish sauce or sugar to suit your taste. - 4Final adjustment

Taste the sauce and add white pepper as desired. Continue to simmer for another few minutes until the sauce reaches your preferred consistency.
Tip: If the sauce is too thick, add a small splash of water. - 5Serve the dish

Serve the warm curry sauce immediately over your preferred protein or vegetables. Garnish with additional kaffir lime leaves if desired for a fresh aromatic finish.
Tip: Keep extra curry sauce on the side for dipping.
