Soy sauce marinated soft-boiled eggs, or shoyu tamago, are a staple in many East Asian households. They are the perfect solution for anyone tired of plain boiled eggs, offering a savory, umami-rich depth that elevates them from a simple snack into a gourmet accompaniment. Whether enjoyed on their own, over a bowl of steaming ramen, or sliced atop a fresh salad, these eggs bring a silky, dense texture and incredible fragrance to any meal.
Ingredients
- 4 eggs
- 100 ml soy sauce
- 150 ml water
- 1/2 red onion
- 2 cloves garlic
- 1 tbsp white sugar
- 2 stalks green onions
- 1 tsp white sesame seeds
Instructions
- 1Boil the eggs

Once the water boils, turn the heat down to low and gently lower the eggs into the pot using a slotted spoon to prevent cracking.
Tip: Lowering the eggs slowly into the hot water helps prevent thermal shock, which can cause the shells to crack. - 2Prepare an ice bath

After cooking the eggs to your desired doneness, remove them from the pot and immediately transfer them into a large bowl filled with ice water.
Tip: The ice water bath stops the cooking process instantly and makes the eggs much easier to peel. - 3Peel the eggs

Once cooled, carefully peel the shells off the boiled eggs. Doing this over a bowl of water can help remove smaller shell fragments.
Tip: Peeling under cold running water or in a bowl of water helps the shell separate more cleanly from the egg white. - 4Mix the marinade base

In a glass bowl, combine 100 milliliters of soy sauce with 150 milliliters of water to create the base of your marinade.
Tip: Using a glass or non-reactive bowl ensures the flavor of the soy sauce remains pure. - 5Add aromatics

Add chopped red onions, minced garlic, a bit of white sugar, chopped green onions, and white sesame seeds to the soy sauce mixture. Stir everything well until combined.
Tip: Adjust the amount of sugar if you prefer a slightly sweeter or more savory profile. - 6Marinate the eggs

Place the peeled eggs into a container and pour the marinade mixture over them until covered. Cover with a lid and refrigerate overnight.
Tip: For the best flavor, let the eggs marinate in the refrigerator for at least 8 to 12 hours before serving.
